I drank Domaine Prieuré Roch’s Nuits-Saint-Georges Premier Cru. It is what is commonly called a “bio” wine. More precisely, it seems to be described as biodynamic or vin naturel. This article explains it in detail, and the wine truly had a rich, deeply nourishing flavor.
I once drank a similar wine in the United States. It was from Balistreri Vineyards in Denver. They were thoroughly committed to their methods: they applied very little pressure when pressing the grapes; because heat could have an adverse effect, they used no pumps and relied solely on siphons when transferring the wine into barrels and bottles; and when bottling, they drew from only one barrel and did not blend. I think I may have been the first person to bring it into Japan. Moreover, it contained no preservatives. (Unfortunately, the Prieuré Roch did.) It is a wine I would love to drink again.
