1.Speaking of Vancouver, salmon comes to mind. These days it has started to appear even in supermarkets, but the taste is completely different. Sushi in Vancouver was cheaper and more delicious than in Japan. The salmon, in particular, was superb.

Copper River Salmon is truly delicious, isn’t it?
The memorable dishes that come to mind for me now are:
1) Sautéed foie gras, seasoned with salt.
The kind without any strange sauce on it. Slice it about 8 mm thick and sauté it lightly until the surface is crisp. The inside should be cooked only enough for the fat to melt. When you put it in your mouth, it simply melts away.
2) Beluga caviar. This too is fairly commonplace, though.
3) Roasted beef fillet eaten while watching the sun set over Kilimanjaro. We pitched our own camp, dragged over a fallen tree, lit it, and cooked 1 head of cattle over a distant fire. 4 of us ate it. It was delicious. The acacia savanna stretched around us, and as we watched Kilimanjaro in the fading light, warmed ourselves by the bonfire fueled with fallen tree trunks, and drank The Macallan, we waited for the meat to cook. Whatever the dish might have been, I think it would surely have been exquisite.
It is also hard to pass up something as simple as stock made with onions, celery, and carrots, seasoned with salt and pepper!
